Last week I had a crazy idea. I wanted to eat a snack that wasn’t sweet.

Yes, I guess I’m getting old and boring.

But I had a vision. I had a dream. A dream of a fresh cucumber-based snack. Of course with some garlic in it. After all, what’s a snack without garlic?

I tell you what it is: not welcome in my kitchen.

So I basically wanted something like a tzatziki but in snack form. So I made this.

Vegan and Paleo Garlicky Cream Cheese With Mint


Ingredients
  • 4-5 mint leaves
  • 1 tbsp capers
  • 1/4 cup sunflower seeds
  • 1/4 cup walnuts
  • 1 tbsp lemon juice
  • water
  • 1 garlic clove
  • 1/2 tsp vinegar
  • some black pepper
  • 1/2 tsp cumin (optional)
  • a cucumber

Instructions
  1. I used my hand blender for this, might also work with a normal blender (mine is not that good I guess):
  2. Put capers, walnuts, sunflower seeds, lemon juice, vinegar and 4 tbsp water and blend together. If not smooth enough add more water. For me it took around 6-7 tbsp water.
  3. Add black pepper, garlic, mint, cumin (optional) and blend again.
  4. Slice the cucumber into slices (not too thick, not too thin) and top with a tsp of the dip.
  5. Enjoy!

Roasted cauliflower is a quick and easy dish to make. When roasted, cauliflower tastes nutty and slightly sweet. In this spicy roasted cauliflower recipe, we toss cauliflower florets with a generous amount of ancho chili powder, smoked paprika, onion powder, garlic powder, salt, and cayenne pepper for some spice. For a spicy dish, add the full amount of cayenne, for milder palates, half the amount called for in the recipe.

You Will Need

  • 1 medium head cauliflower (about 1 1/4 pounds), cut into small florets
  • 2 tablespoons olive oil, grape seed oil or neutral flavored oil
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon ancho chili powder 
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon to 1/4 teaspoon cayenne pepper
  • 1 scallion, ends trimmed and finely sliced
  • 2 to 3 lime or lemon wedges


Directions

  1. Heat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat — lining the pan is not entirely necessary, but this does help with cleanup.
  2. In a large bowl, toss the cauliflower florets with the oil, salt, chili powder, smoked paprika, onion powder, garlic powder, and cayenne pepper. Add the seasoned florets to the baking sheet. Spread them out, facing as many of the flatter edges down onto the baking sheet so that they brown nicely.
  3. Roast until the edges are crisp and brown and the insides are tender, 20 to 35 minutes. After 20 minutes, give the cauliflower a stir to promote even browning.
  4. Serve tossed with the scallions and a squeeze of lime juice.

Tips

  • Any chili powder will work for this recipe, but we love using ancho chili powder, which tastes sweet, fruity, and mild.
  • Smoked Paprika is made from dried and smoked pimiento peppers. It adds a deep smoky aroma and flavor. Unless noted on the packaging, it isn’t typically hot (spicy) and instead is mild and a bit sweet.

Chimichurri Roasted Vegetable Bowl with Grilled Cheese

Chimichurri Roasted Vegetable Bowl with Grilled Cheese is a healthy vegetarian recipe perfect for an easy mouthwatering 30 minute dinner. The balance of flavors between the sweet potatoes, fresh avocado, tomatoes and rich grilled Halloumi cheese is absolutely amazing!




Ingredients
  • 3 medium sweet potatoes
  • 2 medium red onions
  • 1 Tbsp. + 2 tsp. olive oil, divided
  • salt and pepper
  • 1/2 c. fresh cilantro
  • 1 tsp. ground cumin
  • 2 tsp. chopped garlic
  • 2 Tbsp. lemon juice
  • 1/4 tsp. crushed red pepper
  • 8 oz. Halloumi grilling cheese
  • 2 c. cherry tomatoes
  • 2 avocado

Instructions
  1. Preheat oven to 425°.
  2. Peel and cut potatoes into 1/2 inch pieces and the onion into 1/2 inch thick slices.
  3. Toss the potatoes and onion on a pan with 1 Tbsp. olive oil and a dash of salt and pepper. Bake at 425° for 25 minutes.
  4. In a small bowl, mix the chopped cilantro, cumin, garlic, lemon juice, crushed red pepper, 2 tsp. olive oil and a pinch of salt and pepper.
  5. To a large bowl, add the chopped avocado and a splash of lemon juice. Stir until the avocado is well coated so it doesn't brown. Add the halved cherry tomatoes and set aside.
  6. Cut the grilling cheese into 1/3 inch thick slices. When the vegetables have 5 minutes of cooking time left, heat a non-stick pan over medium-high heat. Cook the cheese on each side for about 1 minute or until it is golden and crunchy.
  7. Add the roasted vegetables to the avocado and tomatoes and give a light toss.
  8. Divide between three bowls and top with the grilled cheese and a drizzle of chimichurri. Serve immediately!

Notes

Do not cook the cheese well in advance of the vegetables being ready. The grilling cheese is best enjoyed right from the pan for the optimal texture.

Quick 15 minutes helathy Baked carrot fries are perfect for kids evening snacks. This is one nice way to make kids eat carrot.

Carrot is one vegetable which comes under top 5 least favorite veggies in my son’s list. I usually try to mix it with other veggies, and I hide carrots to make him eat. Most of the time even before tasting I would hear a big no from him. I always wonder how a kid with sweet tooth is a not a fan of a vegetable with mild touch of sweetness.


Few weeks back when my son had a play date, I made sweet potato fries for the kids, and I saw them eating happily. That’s when I thought of trying carrot fries. If it works carrot might be the next broccoli for him. Yeah broccoli was another vegetable he never tasted, until baked broccoli was experimented. Now a days it has become one of his frequently wanted vegetable.

Ingredients
  • Carrots - 2, peeled and cut into the shape of fries

  3. Add the carrots and spread it. Bake it for around 14- 18 minutes. Broil for 2-3 minutes or more based on the texture you prefer. Enjoy with your favorite dip

1. Baking time may vary depending on the oven and also the thickness of the carrot. Watch out after 15 minutes
2. Coconut, corn flakes, coarse nuts powder etc. can be used for crispy outer layer
3. Chilli powder can be used instead of pepper powder
4. Garam masala, kitchen king masala etc. can be used for Indian version of carrot fries
5. Fries taste great of consumed immediately
6. Any dips can be taken as s side. We mostly have it with coffee and finish even before thinking about a dip😊

Garlic Butter Steak and Lemon Green Beans Skillet

Don't get stuck in a steak rut! Shake things up by making an easy garlic-and-herb butter that's a delicious addition to your meat and is also great with vegetables.

Ingredients

Herbed Butter:

  • 1 stick (1/2 cup) unsalted butter, softened to room temperature
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon finely grated lemon zest
  • 2 cloves garlic, minced
  • Kosher salt and freshly ground black pepper
Steak:
  • One 1-pound rib-eye steak (about 1 inch thick)
  • Kosher salt and freshly ground black pepper
  • One 3-inch sprig fresh rosemary, needles stripped from the stem and chopped
  • 1 tablespoon safflower oil or other flavorless oil
  • Green Beans:
  • 8 ounces thin French green beans, trimmed

Directions
  1. For the herbed butter: Add the butter, chives, oregano, parsley, lemon zest, garlic and some salt and pepper to a bowl and mix together well.
  2. Put the butter in the center of a piece of plastic wrap and, using the plastic wrap, form it into a sausage shape. Seal it and pop it in the fridge for 1 hour.
  3. For the steak: Allow the steak to rest at room temperature for about 15 minutes. Fill a saucepan with some water, add a generous pinch of salt and bring to a boil. This is for cooking the string beans so it's all ready at the same time.
  4. Season both sides of the steak well with the chopped rosemary and some salt and pepper.
  5. Heat a cast-iron skillet over high heat until smoking. Add the oil and allow it to heat up for 1 more minute. Add the steak to the hot skillet and cook about 4 minutes per side for medium-rare. Remove to a plate, cover with a piece of aluminum foil and allow it to rest for 5 minutes.
  6. For the green beans: Meanwhile, add the green beans to the salted boiling water and cook until bright green and crisp-tender, 3 to 5 minutes. Drain well.
  7. When ready to serve, toss the green beans with about 2 tablespoons of the herbed butter. Slice the steak and top with a piece of the herbed butter.

Cauliflower Hot Wings (Vegan & Gluten-Free)

These vegan cauliflower hot wings with vegan aioli are the perfect comfort food! They’re so tangy, spicy, and incredibly comforting. And they’re also a lot healthier than chicken wings! We’ve made them so many times and they’re always a real crowd-pleaser!

Ingredients
  • 1 head of cauliflower
  • 3/4 cup all-purpose flour (or chickpea flour for a gluten-free version)
  • 3/4 cup unsweetened almond or soy milk
  • 1/4 cup water
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons paprika powder
  • salt
  • black pepper
  • 3/4 cup panko breadcrumbs (omit for a gluten-free version)
  • 1 cup spicy BBQ sauce
  • 1 teaspoon sriracha sauce (optional)
  • 2 green onions, cut into rings

Instructions

  1. Heat the oven to 350 °F.
  2. Carefully cut the cauliflower into bite-sized florets.
  3. In a large bowl, combine the all-purpose flour, the plant-based milk, the water, the garlic power, the paprika powder, the salt, and the black pepper. Stir until well combined. For a gluten-free version substitute the all-purpose flour with chickpea flour (also omit the water if using chickpea flour).
  4. Dip the florets into the batter, so they’re completely coated.
  5. Roll them in the panko breadcrumbs. Omit this step for a gluten-free version. However, they’re way crispier with the panko breadcrumb coating.
  6. Line a baking sheet with parchment paper and lay the cauliflower florets on the baking sheet. Don’t put them on top of each other. Bake for 25 minutes at 350 °F.
  7. Transfer the cooked cauliflower wings to a bowl. Combine the BBQ sauce with a teaspoon sriracha sauce and pour it over the baked cauliflower wings. Evenly coat them from all sides by stirring them a few times.
  8. Put the coated hot wings back on a baking sheet lined with parchment paper. Bake again for 20 minutes at 350 °F.
  9. Serve immediately and sprinkle with the green onions and serve with vegan aioli or vegan ranch sauce. Enjoy!

Notes

  • I recommend rolling these cauliflower wings in panko breadcrumbs after dipping them into the flour batter. It makes them a lot crispier!
  • For a gluten-free version, you can use chickpea flour instead of all-purpose flour. Also omit the panko breadcrumbs.
  • Immediately serve these cauliflower wings. They're super crispy when they come out of the oven, but unfortunately they will be a lot less crispy when they cool down.
  • Don't store them in air-tight containers. I've done this before and they became really mushy. The taste was still amazing, but the texture wasn't as planned.
  • You can, however, reheat them in the oven for about 10-15 minutes. But they will still be softer and not as crispy as when they're freshly baked.

Vegan Meatballs with Spaghetti

These vegan meatballs are the perfect comfort food. They’re really easy to make, so delicious, and incredibly healthy! Serve them with spaghetti for a quick and easy dinner. I promise you that you will LOVE them. They’re one of my all-time favorite recipes!


Ingredients

For the vegan meatballs:

  • 1 15 oz can kidney beans
  • 1/2 tablespoon olive oil
  • 1 large clove of garlic, minced
  • 1/2 onion, chopped
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 tablespoon tomato paste
  • 1 teaspoon soy sauce
  • 1/2 cup rolled oats
  • 1/3 heaped cup sunflower seeds
  • salt
  • black pepper

For the chunky marinara sauce:

  • 1/2 tablespoon olive oil
  • 1 small onion, chopped
  • 1 large clove garlic, minced
  • 1 carrot, cut into small pieces
  • 1 tablespoon tomato paste
  • 1/4 cup dry red wine
  • 1 can diced tomatoes (14,5 oz)
  • 1 teaspoon oregano
  • fresh basil leaves, cut into small pieces
  • salt
  • black pepper

For the spaghetti:

  • 9 oz whole wheat spaghetti
  • For the cashew Parmesan:
  • 1/2 cup unsalted cashews
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon garlic powder
  • salt

Instructions

  1. Cook the spaghetti according to the instructions on the package.
  2. Rinse and drain the kidney beans. Put them in a medium bowl and mash them well with a fork or a potato masher.
  3. In a medium pan, heat some oil and sauté the onions for 3 minutes. Add the minced garlic and cook for another minute.
  4. Put the sunflower seeds in a food processor and pulse until a fine meal is achieved.
  5. Add the sauteed onion and garlic to the mashed beans together with the spices, the tomato paste, the soy sauce, the ground sunflower seeds, and the oats. Season with salt and pepper.
  6. Use your hands to thoroughly mix everything. Then form about 12-14 vegan meatballs. (Please note that I doubled the recipe for the photos, so there are more meatballs).
  7. Preheat the oven to 350 °F bake the vegan meatballs for about 15 minutes. Carefully flip them halfway through the baking time.
  8. Alternatively you could also pan-fry them. In a medium pan, heat some olive oil over medium heat and gently roast the bean balls for about 4 minutes until they are golden. You'll achieve the best results with a cast iron pan. However, I would recommend the baking version. Not only is this version oil-free, they meatballs also become more crispier and firmer this way.
  9. Make the marinara sauce: In a medium pan, heat the olive oil over medium heat. Sauté the onions for 3 minutes, then add the garlic and the carrot. Cook for another 2-3 minutes. Stir in the tomato paste and cook for 2 minutes.
  10. Then deglaze with red wine and allow to evaporate. Add diced tomatoes and simmer for about 10 minutes. Season with oregano, salt, and pepper. Before serving add some fresh basil leaves.
  11. Make the cashew Parmesan: Put the cashews, nutritional yeast, salt, and garlic powder in a food processor and pulse until a fine meal is achieved.
  12. Serve the spaghetti with the marinara and vegan meatballs and sprinkle with Parmesan and fresh basil leaves.

Notes

  • You can either bake or pan-fry these vegan meatballs. However, I would recommend baking them in the oven. This way they become a lot crispier. Besides, the texture is firmer and you don't need any oil.
  • Pan-frying is, however, the quicker version. If you're short on time, you can choose this method. Just be careful when you turn the meatballs. You'll achieve the best results with a cast iron pan.
  • I like these vegan meatballs even better when they're cold. They become a lot firmer when they're cold. I love to bring them to picnics and potlucks!
  • Make sure to sauté the onion and the garlic before you add it to the bean mixture. I've tried the recipe without sauteing and didn't like it because the onions were still crunchy.
  • For a gluten-free version, make sure you're using gluten-free oats and substitute the soy sauce with tamari.
